A classic stuffed peppers recipe featuring ground beef, rice, diced tomatoes, and seasonings baked inside green bell peppers and topped with mozzarella cheese and cilantro.
Preheat oven to 400°F (200°C).
Cut up the onion and cook until soft. Then, add the chopped garlic and tomato paste and cook for 1 minute.
Add the ground beef to the pan, cook, and drain any excess fat.
Stir in the can of diced tomatoes (optionally with oregano and basil for more flavor) and the uncooked rice.
Add the chopped jalapeños and any additional seasonings desired. Let this mixture cook while you prepare the green peppers. Cut off the tops of the green peppers and core out all of them.
Stuff all the peppers with the meat and rice mixture and place them in a baking dish (like a 7x7 inch pan) so they stand upright.
Cover the baking dish with foil and bake at 400°F (200°C) for 40 minutes, or until the peppers are soft.
Top with fresh cilantro and enjoy!
