This recipe offers two methods (Instant Pot or Crockpot) to create delicious French Dip Subs featuring a tender chuck roast, savory au jus, and melted cheese on sub rolls.
Instant Pot Method:
1. Season chuck roast on both sides with salt, pepper, and garlic seasoning. Sear on all sides in the Instant Pot and then remove.
2. Toss in chopped onions, chopped garlic, Worcestershire sauce, and beef broth, deglazing the bottom of the pot.
3. Add aus jus packets and mix before placing the beef back in and closing up.
4. Pressure cook for 2 hours.
5. Remove meat and shred before putting it back in the pot with the broth.
6. Slice open bread and build your sandwiches. Broil them to toast the bread and melt the cheese.
7. Serve with a cup of the broth for dipping.
Crockpot Method:
1. Season chuck roast on both sides with salt, pepper, and garlic seasoning. Sear on all sides in a pan and remove.
2. In the same pan, cook onions until translucent, then add chopped garlic, Worcestershire sauce, and 2 aus jus packets. Stir and cook for a few seconds before adding beef broth to deglaze the pan.
3. Place the seared chuck roast in the crockpot and pour the broth mixture over the top. Cover and cook on low for 6-8 hours.
4. Remove beef and shred before returning it to the broth.
5. Slice open bread and build your sandwiches. Broil them to toast the bread and melt the cheese.
6. Serve with a cup of the broth for dipping.
