An easy recipe for delicious homemade banana bread, featuring overripe bananas, eggs, butter, brown sugar, flour, baking soda, and salt. Baked to a moist perfection, it's perfect for a snack or breakfast.
Preheat oven to 350°F (175°C). In a large bowl, mash peeled bananas to a smooth consistency with a fork or whisk. Add in and beat eggs until smooth. Combine brown sugar and melted butter and mix. Add remaining dry ingredients (flour, baking soda, salt) and mix until the batter is consistent. Lightly grease a loaf pan and pour in the batter. Optional: lightly sprinkle the top with brown sugar to give it a crumb cake texture. Bake at 350°F (175°C) for 45 minutes to an hour. Toothpick check the loaf; if it comes out clean, it’s done. Let cool and enjoy! Will keep in the fridge for up to 4 days.
