Preheat Oven to 350°F. In a medium heat pan, melt butter and add chopped red pepper and onion, cooking until soft. Push the vegetables to the side. Add chopped cooked shrimp, minced garlic, Creole seasoning (or Cajun seasoning to taste), lemon juice, and Worcestershire sauce to the pan. Cook until fragrant, allowing the shrimp to gain some color, then mix everything together. In a smaller oven-safe dish, add the pan contents, sour cream, softened cream cheese, mozzarella cheese, and 1/4 cup sliced green onions (reserving some for garnish). Mix everything slightly. Bake at 350°F for 15-25 minutes until bubbly. Top with your choice of cheese (Colby Jack, Parmesan, or more mozzarella) and broil until the desired color is achieved. Sprinkle on the reserved green onion garnish and serve hot with thick chips or toaster baguettes.
For smoker: Smoke at 250°F for 2 hours, stirring halfway through.
