This hearty Bacon Cheeseburger Soup is a perfect meal idea to add to your dinner rotation, featuring ground beef, cheese, bacon, and vegetables in a creamy broth.
Brown the ground beef in a large stock pot. Once cooked, use a paper towel to remove excess grease, then remove the beef from the pot and set aside. Add 1 tablespoon of bacon grease (or olive oil) and 1 tablespoon of butter to the pot on medium heat. Once melted, add the chopped onion, carrots, and celery, seasoning with basil, salt, and pepper to taste. Stir until tender. Once the carrots are softened, add the remaining 3 tablespoons of butter and flour, stirring to coat evenly. Let cook for a few minutes to brown and remove the raw flour taste. Add the potatoes and stir until incorporated. Pour in the chicken broth and let come to a light boil, stirring occasionally. Once the potatoes are fork tender, add the milk, sour cream, and Velveta, stirring until the cheese is completely melted into the soup. Turn off the heat and add the chopped bacon, saving some to garnish if desired. Taste for seasoning and add more if needed. Top with a little parsley or serve with crackers and croutons.
